In this video I bring you to Xuan Xuan Xiao Yuan (not exactly easy to pronounce for foreigners, I know), a traditional Sichuan restaurant serving many classic old school dish rarely seen in modern days. The chef and owner of this place is one of the most authoritative figure in Sichuan cuisine, he also owns another Michelin one star restaurant in Chengdu and had many disciples worldwide, including a Japanese disciple that owns a Michelin one star restaurant in Japan.

    skip the desert and avoid the pricey wine. It's the food that's the star here. You can have a great meal for $80 a person. I did.

    14:15 This is not really cheese inside. Here in Balkans we call it Kajmak. After fresh milk is boiled and cooled down milk fat starts to float on top. We scoop it and that's Kajmak. Basically Kajmak is milk fat with some milk in it. Fresh Kajmak has creamy milky texture and aroma. As it gets older it will start to get more and more cheesy texture and aroma. It is milk fat oozing out, like melted butter. 2:50 These pinjur and urnebes have strange yellow color. Pinjur main ingredient is type of sweet red pepper. Urnebes is grounded cheese mixed with grounded chillies.

    7:52 Love the video but the main dishes (apart from biriyani) are NOT designed to be eaten alone as you say. They are all eaten with either bread or rice....which will manage the salt level.

    I am from NY and I have been to China, five cities from Beijing to Shanghai to Chongqing and Xian, Guangzhou and overall food in China is far better than in US including Mott Street and Flushing and the quality of meat, fish, seafood and condiments is in a different league.

    That "chenna poda " is not authentic , it's just their take on the original recipe. It doesn't even come closer to the original one.

      Umami is the source of human pleasure and the brain actively seeks it, so it has nothing to do with disgust. However, I can kind of understand what you mean if all sources of umami are the same, says in certain vegetarian food, all the umami are kind of soy sauce like, making things monotone. But that's not the case here.
